Paleo Banana Pancake Recipe

Time: 10 minutes
Serves 1-2 people (about 3-5 small pancakes)

Ingredients:

  • 2 ripe bananas
  • 2 egg
  • 1/2 Tsp Vanilla Extract
  • 1/4 Tsp Ground Cinnamon
  • 1/4 Tsp Baking Powder
  • Top with fresh fruit (optional)

Step 1:
In a medium size bowl, mash the bananas into a smooth creamy texture. I used a fork to do this and it worked perfectly.

Step 2:
In a separate bowl, whisk the eggs.

Step 3:
Stir the eggs into the mashed bananas, adding in the vanilla, cinnamon, and baking powder.

Step 4:
Heat your skillet to medium low – medium heat.
Lightly coat skillet with coconut oil.
Scoop about 2 Tablespoons of the pancake mix onto the skillet, and let sit about 1-2 minutes before flipping. The pancakes should be a light tan color upon flipping. Cook until golden brown or desired consistency.

The first time I had these pancakes, I fell in love. They are so easy to make, delicious and healthy! There’s no need for syrup since the pancakes are already sweet from the Bananas – I just top mine with blueberries for a sweet and healthy addition.
