Mexican Tortilla Soup | Vegan Recipe

Chicken Tortilla soup is my absolute favorite, so I thought I’d make a vegan friendly version for vegans and vegetarians! Check out the video at the bottom for a quick tutorial 🙂


  • 2 Cups vegetable broth
  • 1 1/2 Cups of canned tomatoes
  • 1 Can of black beans
  • 1 Can of garbanzo beans (this is my chicken alternative!)
  • 1 Cup of corn
  • 1/2 a freshly squeezed lime
  • 1 Teaspoon Garlic
  • 1 Teaspoon pepper
  • 2 Tablespoons of chili paste – you can add more or less to change the level of spice)
  • 1 Handful fresh cilantro

Bring all ingredients to a boil and then pour into a bowl and enjoy! Top with avocado, salt, pepper, and cilantro!
